What variables hold the information of the current logged-in user? I am specifically looking for the extra and extra2 fields of the user profile of the currently logged-in user.

as with all variables the variables available very depending on what page you are on. It doesnt make any sense at all for the script to store user details like extra registration fields when a user is just browsing a site. Variables generally only exist when and where needed.

use smarty debug to see what variables are available on any given page.

also just to add,some user variables are stored in php sessions which are accessible anywhere by using smarty to access the session variable...
