sort Parent drop down list

Hi,
As the title says i want to sort the extra feilds Parent drop down list for only one of them (Condition)
I want to have

Quote:

Poor
Average
Good
Very Good
Excellent

But currently i have to put a number infront of them (1-5) to get them to go in order, but it doesnt look the greatest.
Is there any way to do this?

EDIT: They only need to be sorted in checkout.
