Well, obviously, I'm not the sharpest tool in the shop. I'd like to change 'Great Britain and Northern Ireland' to 'UK'. I've been searching files for an hour or more and just can't find it! It's not in english.php or settings countries.php or the template files I've looked at. Also, I can't see that it can be done in Admin. Help!

The country names are stored in the database and you can modify them by going to administration -> settings -> Edit Countries.

If you already have users registered then it will pull their country name from the account and you can change it by editing the user account.

That's what was going on. I had already changed it where you said but I was, mistakenly, expecting it to also change the registered users.
