Please describe in detail the issue you are having:
I want to make my site only available to Australian customers (as advertisers) - should I go thru in admin and delete each of the other countries or is there a simpler way?

Yes, just simply delete the other countries that are not used from the database (in the admin panel). That is pretty much the easiest way to go.

wow - is this really the only way to do it?- the fact that the page refreshes after each deletion it is going to take an hour or so just to delete all the countries

You could do it directly in the database with phpMyAdmin or whatever tool that your web hosting service provides for your databases.

If you are only running in one country , why do you not just disable country from being used from your control panel for search, usercheckout, usergroups, etc. It will then not be asked for and neither will it show. I think that will solve your problem quickly and logically.
