Default encoding problem

soory whit my english is use V4.1 and i have a encoding problem whit the extra fields i change all to windows 1255 and now i cant understand how i change this extra field ansers any body plz can help me?
i Think that is aencoding problem in one of the files but i can't find were plz help

are u sure ? but my all site is in windows -1255 now i have to change all?
there is Option to change the coding only in the this page?

i just have to know were is the file that the encoding of the listing page is on it this is all
i try all for now and mybe you can help for it
