Default Is There any way to have different page titles for each page?

I have been doing a lot, lot, lot of research on my competitors and the one thing I notice with all of them is a different title for each page of their site. This is allowing them to have numerous relative keywords without repeating themselves. Is it possible to have different titles for our pages? If not, maybe someone should work this out. My competition is way ahead of me on this particular "search engine" must have.

example: I cannot list quarter horses for sale in my title or my home page because I already have horses for sale at the limit, but I could list it on my category page "quarter horses for sale", if we can list a different title.

This is a MUST if you are at all concerned with what SEs think of your site. And aren't we all?

The easiest way to accomplish this is to assign a new variable to the main layout template from the pages that are generating duplicates on your site, then in that main layout template check to see if that new variable exists and if so, use it instead of the default.

This all sounds greek to me. Can you please explain in 'redneck' terms so I can understand. I am not using the default template.
